# Food / edible fats

## 1. Classification

* **COFEPRIS category:** food (edible fats). **Prepackaged foods** regime.
* **SCIAN** code for the food line of business.

## 2. Sanitary procedure

* **Operating Notice** + Sanitary Officer (no sanitary registration).
* Good practices: **NOM-251-SSA1-2009**.

## 3. Labeling — **NOM-051-SCFI/SSA1-2010** (mod. 2020)

* **Seals/octagons + precautionary statements** according to nutritional profile (fats: special attention to
  **saturated fats / trans fats / calories**). The exact cutoffs of each octagon (per 100 g/100 ml)
  are in the **Annex of NOM-051** (DOF 27/03/2020, Third Phase in force since 01/10/2025) — see [NOM-051 Seals](sellos-nom051.md) for the thresholds table.
* General data for a prepackaged food (product name, ingredients, net content, batch, expiration date,
  responsible party, country of origin, nutritional declaration).
* If the intended use is different (e.g., fatty raw material for manufacturing), confirm whether consumer
  or input labeling applies.

## 4. What the EUM system RESOLVES

* Seals by nutritional profile → **compliance engine** (Label Studio). Requires verified thresholds.
* Batch + analysis → [Smart COA](../smart-coa.md). Claims → `prohibitedClaims` guardrail.
