2. Sanitary procedure

  • Prepackaged foods: Operating Notice + Sanitary Officer (no sanitary registration).
  • Good practices: NOM-251-SSA1-2009 (hygiene practices for foods/beverages/supplements).

3. Labeling — NOM-051-SCFI/SSA1-2010 (mod. 2020)

General labeling of prepackaged foods and non-alcoholic beverages. Includes:
  • Seals/octagons system (“EXCESS CALORIES / SUGARS / SATURATED FATS / TRANS FATS / SODIUM”) and precautionary statements (sweeteners / caffeine “not recommended for children”).
  • The exact thresholds of each octagon (per 100 g/100 ml) are in the Annex of NOM-051 (DOF 27/03/2020, Third Phase in force since 01/10/2025) — see NOM-051 Seals for the thresholds table. A missing seal when it applies = violation.
  • General data: product name, ingredients, net content, batch, expiration date, responsible party, country of origin, nutritional declaration.

4. Advertising / claims

No therapeutic claims. Be careful with advertising directed at minors when the product carries seals. *Legal basis: Regulation of the LGS on Advertising + NOM-051.

5. What the EUM system RESOLVES

  • Seal calculation by nutritional profile → objective of the compliance engine (Label Studio reviews/ adds the octagons that apply). Requires the verified thresholds map from the DOF (F2/F3 of the plan).
  • Batch + analysis (cannabinoids, THC ≤1%) → Smart COA (QR/CVV).
  • Claims → prohibitedClaims guardrail.
